@Birdman: I wish I knew... Sorry! :-) These are really old traditions, some from small villages in Portugal but mostly from Spain.

At a second look at the costumes, I noticed the braids holding up the white socks. In my childhood I used to weave similar braids in intricate patterns for the same traditional purpose.
